There will always be small differences in the way people celebrate festivals and these can snowball overtime prevailing mindsets and pop culture can affect things such as the kind of them served or the way activities are conducted.
The main difference though is the spirit behind the occasion in the past these occasions marked something very real to people such as a great harvest or the passing of a great leader today.
Some people celebrate for the sake of celebrating.
